  • 3 cups chopped baby spinach
  • 2 large carrots shredded
  • 1/2 cup frozen peas
  • 1 shredded zucchini
  • 2 ½ cups water
  • 1 tablespoon olive oil
  • 1 teaspoon dried parsley

Method
 

Step 1:

Step 2:
  1. While turkey cooks, shred the carrots and zucchini using a grater. Chop the baby spinach into smaller pieces if desired.

Step 4:
  1. Place the pot over medium heat and bring to a gentle simmer. Cook, stirring occasionally, until the vegetables are tender and the flavors are combined, about 10-15 minutes. Add more water if needed to maintain moisture.
Step 5:
