Ingredients
  

  • 1 cup mashed sweet potato from 1 medium sweet potato
  • 2 cups oat flour or finely ground rolled oats
  • 2 tablespoons ground flaxseed
  • 1 medium apple peeled, cored, and grated
  • 1 large egg
  • 2 tablespoons unsweetened applesauce
  • 2 tablespoons melted coconut oil

Method
 

Step 1:
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
Step 2:
  1. In a large bowl, mash the cooked sweet potato until smooth. Grate the peeled and cored apple using a fine grater and add it to the bowl.
Step 3:
  1. Add the oat flour, ground flaxseed, egg, applesauce, and melted coconut oil to the bowl. Mix everything thoroughly with a spoon or your hands until a dough forms. If the dough is too sticky, add a little more oat flour until it’s manageable.
Step 4:
  1. Roll out the dough on a floured surface to about ¼ inch thick. Cut into small kibble-sized pieces using a knife or mini cookie cutter. You can also form small bite-sized balls by hand.
Step 5:
  1. Place the pieces on the prepared baking sheet and bake for 25–30 minutes or until golden brown and firm. Let the treats cool completely before serving or storing in an airtight container.
