Method
 

Step 1:

Step 2:
  1. In a medium bowl, combine 1 cup of oat flour and 1 teaspoon baking soda. Stir well to evenly distribute the baking soda.
Step 3:
  1. In another bowl, whisk together 1/4 cup unsweetened applesauce, 1/4 cup natural peanut butter (make sure it’s xylitol-free), 1 large egg, and 2 tablespoons vegetable oil until smooth.
Step 4:
  1. Fold 1/2 cup grated carrots into the wet mixture. Then gradually add the dry ingredients to the wet bowl, stirring until just combined. The batter will be thick.
Step 5:
  1. Pour the batter into the prepared pan or evenly distribute among muffin cups. Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
Step 6:
  1. While the cake cools, mix 1/4 cup peanut butter with 1/2 cup plain Greek yogurt until smooth. Once the cake is fully cooled, spread the frosting on top. Serve immediately or refrigerate for later use.
