Ingredients

  • 1 lb fresh Brussels sprouts trimmed and halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon fresh garlic finely chopped
  • 1 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 2 cups French bread cut into 1-inch cubes
  • 1 cup housemade or store-bought croutons
  • 2 tablespoons capers
  • 1/4 cup fresh lemon juice
  • 4 tablespoons grated Romano cheese

Equipment

  • Baking sheet
  • Large mixing bowl
  • Chef’s knife
  • Cutting board
  • Measuring spoons and cups
  • Spatula or tongs
  • Oven

Method

Step 1:
  1. Preheat your oven to 400°F (200°C). Trim the stems and cut the Brussels sprouts in half. In a large bowl, toss them with olive oil, garlic powder, chopped garlic, Italian seasoning, and salt until evenly coated.
Step 2:
  1. Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast for 20–25 minutes, flipping halfway through, until they’re golden brown and slightly crispy on the edges.
Step 3:
  1. While the sprouts are roasting, place the French bread cubes and croutons on another baking tray. Toast them in the oven for 5–7 minutes or until crispy and golden. You can do this during the last 7 minutes of roasting the sprouts.
Step 4:
  1. In a large serving bowl, combine the roasted Brussels sprouts, toasted bread cubes, croutons, capers, lemon juice, and grated Romano cheese. Toss everything gently until well mixed. Serve immediately while warm for the best texture and flavor.
