Ingredients
  

  • 2 ½ lbs 1.13 kg lean ground turkey or chicken
  • 1 cup uncooked brown rice
  • 1 ½ cups carrots peeled and finely chopped
  • 1 ½ cups green beans chopped
  • 1 cup green peas fresh or frozen
  • 1 medium apple cored and diced (no seeds)
  • ½ cup pure pumpkin purée unsweetened, not pie filling
  • 4 cups water
  • 1 tablespoon coconut oil or use a crockpot liner for easier cleanup

Method
 

Step 1:
  1. Lightly grease the crockpot with coconut oil or line it with a crockpot liner to prevent sticking and ease cleanup.
Step 2:
  1. Place the ground turkey or chicken at the bottom. Then add brown rice, carrots, green beans, peas, apple, and pumpkin purée. Pour in 4 cups of water over everything.
Step 3:
  1. Cover the crockpot and cook on low for 5–6 hours or high for 2–3 hours. Stir once or twice if convenient, but it’s not necessary.
Step 4:
  1. Once fully cooked, let the mixture cool completely. Use a spoon or fork to break up the meat and mix well. Portion into meal-sized containers and store in the refrigerator (up to 5 days) or freezer (up to 3 months).
