Ingredients
  

  • cups brown rice
  • 1 pound lean ground turkey or chicken no seasoning
  • 3 medium carrots chopped
  • 1 cup chopped green beans
  • 1 medium apple cored and diced (no seeds)
  • 2 large eggs
  • 1 tablespoon coconut oil or use a crock pot liner for easy cleanup
  • 1 large sweet potato or 1 medium butternut squash peeled and cubed
  • 1 can about 15 oz kidney beans, drained and rinsed

Method
 

  1. Rinse the brown rice thoroughly. Peel and dice the sweet potato or butternut squash. Chop carrots, green beans, and apple (make sure to remove apple seeds).
  2. In a skillet over medium heat, cook the ground turkey or chicken until no longer pink. Drain excess fat if needed.
  3. Add the browned meat, rinsed rice, chopped vegetables (carrots, green beans, sweet potato/butternut squash), diced apple, and kidney beans into the crock pot.
  4. Crack the eggs into a bowl and lightly beat them. Pour the eggs evenly over the ingredients in the crock pot. Add the coconut oil on top.
  5. Pour 1½ cups of water into the crock pot. Use a spoon or spatula to gently mix all ingredients so they are evenly distributed.
  6. Cover the crock pot and cook on low heat for about 4 hours. Check for doneness: rice should be tender, vegetables soft, and meat fully cooked. Stir gently before serving.
