Step 1:
- Rinse the chicken livers and trim any connective tissue. Peel and dice sweet potatoes into small, bite-sized pieces.
Step 2:
- In a large pot, combine chicken livers, chopped sweet potatoes, canned pumpkin, and 2 cups of water. Bring to a boil, then reduce heat and simmer for about 20–25 minutes, or until the livers are fully cooked and sweet potatoes are soft.
Step 3:
- Stir in the cooked brown rice and mix well. Let it simmer for an additional 5 minutes to combine flavors.
Step 4:
- Allow the mixture to cool completely before serving. Portion into daily meals and refrigerate up to 4 days or freeze for up to 3 months.
